Creamy Dijon Chicken Pasta with Broccoli

Serving Size: 4 servings

Ingredients:

- 450 g (1 lb) boneless skinless chicken breasts

- 120 ml (½ cup) half and half

- 250 g (8 oz) bow tie pasta

- 60 ml (¼ cup) Dijon mustard

- 240 ml (1 cup) chicken broth

- 1 tsp Italian seasoning

- 50 g (½ cup) grated Parmesan cheese

- 150 g (5 oz) fresh broccoli florets

Instructions:

1. Cook the bow tie pasta according to package instructions. Add the broccoli florets to the pasta during the last 2-3 minutes of cooking. Drain and set aside.

2. In a skillet, cook the chicken breasts over medium heat until fully cooked, about 6-7 minutes per side. Remove and slice into strips.

3. In the same skillet, add the chicken broth and bring to a simmer. Stir in the Dijon mustard and Italian seasoning.

4. Mix in the half and half and let the sauce simmer for a few minutes until slightly thickened.

5. Add the cooked pasta and broccoli to the skillet, tossing to combine and coat the pasta in the sauce.

6. Stir in the grated Parmesan cheese until melted and well combined.

7. Serve the pasta topped with the sliced chicken and enjoy.
